Milk Specialties Global has put added focus on diversifying its line of functional Milk Proteins at its various manufacturing plants. One area Milk Specialties is excited to share is the increase in production of enhanced casein Milk Protein Concentrates (MPCs) and Isolates (MPIs).

Milk proteins fall into two categories: caseins and whey proteins. Caseins are found in a micellar state in milk and make up 80% of the protein fraction, and whey proteins are soluble and make up 20% of the protein fraction.

Milk Specialties Global has refined a proprietary process that allows for the concentration of caseins in their micellar state (native form) up to 92% of protein content. The enhanced casein milk protein will be available in a variety of protein levels (MPC 70, MPC 80, MPI 85 and MPI 90).

The enhanced casein milk proteins offer a number of advantages over classic milk proteins. Depending on the applications, these protein ingredients will fall into two product lines: CasPro™ and MicelPro™

The CasPro line is primarily designed for cheese and yogurt manufacturing. Due to its higher micellar casein content, manufacturers are able to increase their yields and throughput, thereby decreasing their manufacturing costs per unit of finished product.  The use of CasPro will generate less liquid whey byproduct per pound of finished product; which is beneficial for facilities that are not equipped to process this by product stream.

The MicelPro line will primarily target nutritional applications. MicelPro is a more pristine source of casein proteins (as compared to traditional caseins and caseinates) since it has not undergone any type of acid or rennet induced denaturation.  As a result of the casein proteins maintaining their micellar state, CasPro not only has a superior amino acid profile, it offers the functionality of being digested slowly (as per extensive published work by Boirie and Co).  Applications include sports and performance nutrition, weight loss, prolonged amino acid release formulas as well as finished products specifically targeting the aging population (boomers and seniors).
